Ingredients

  • 4 Anaheim chile peppers
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Roast the Anaheim chile peppers until charred. Let them cool, then peel and chop.
  2. In a pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  3. Add the chopped peppers, apple cider vinegar, brown sugar, salt, and black pepper. Cook for about 10 minutes until the mixture thickens.
  4. Let it cool before serving.
