Apricot Fruit Leather Recipe

Main Ingredients
- 2 cups Dried Apricots unsweetened
- 2 cups Water
- 1 tablespoon Lemon Juice freshly squeezed
Preheat your oven to 140°F (60°C) or the lowest setting.
In a medium saucepan, combine the dried apricots and water. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the apricots are soft.
Drain the apricots and place them in a blender. Add the lemon juice and blend until smooth.
Line a baking sheet with parchment paper. Spread the apricot puree evenly over the parchment paper, about ⅛ inch thick.
Bake in the preheated oven for 4-6 hours, or until the fruit leather is no longer sticky to the touch.
Remove from the oven and let it cool completely. Once cooled, cut into strips and roll up in parchment paper. Store in an airtight container.
