Apricot Fruit Leather Recipe

Main Ingredients
- 2 cups Dried Apricots unsweetened
- 2 cups Water
- 1 tablespoon Lemon Juice freshly squeezed
- Preheat your oven to 140°F (60°C) or the lowest setting. 
- In a medium saucepan, combine the dried apricots and water. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the apricots are soft. 
- Drain the apricots and place them in a blender. Add the lemon juice and blend until smooth. 
- Line a baking sheet with parchment paper. Spread the apricot puree evenly over the parchment paper, about ⅛ inch thick. 
- Bake in the preheated oven for 4-6 hours, or until the fruit leather is no longer sticky to the touch. 
- Remove from the oven and let it cool completely. Once cooled, cut into strips and roll up in parchment paper. Store in an airtight container.
