Ingredients 

Main Ingredients

  • 4 eggs
  • 4 slices bacon cooked and crumbled
  • 1 avocado diced
  • ½ cup cheddar cheese shredded
  • 1 tablespoon butter

Tomato Salsa

  • 1 tomato diced
  • ¼ cup red onion finely chopped
  • 1 tablespoon cilantro chopped
  • 1 teaspoon lime juice
  • 1 pinch salt

Instructions 

  1. 1. In a mixing bowl, whisk the eggs until well beaten.
  2. 2. Heat a frying pan over medium heat and add the butter.
  3. 3. Pour the eggs into the pan and cook until they begin to set.
  4. 4. Sprinkle the bacon, avocado, and cheese over one half of the omelet.
  5. 5. Fold the other half of the omelet over the filling and cook for another minute or until the cheese is melted.
  6. 6. In a small bowl, combine the tomato, red onion, cilantro, lime juice, and salt to make the salsa.
  7. 7. Serve the omelet topped with the fresh tomato salsa.
