Ingredients 

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Water
  • 1 cup Chickpeas cooked
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Spinach fresh
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. 3. Fluff the quinoa with a fork and let it cool.
  4. 4. In a large mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, and spinach.
  5. 5. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
  6. 6. Top with crumbled feta cheese before serving.
