Ingredients 

Pancakes

  • 1 cup barley flour
  • 1 cup milk
  • 1 large egg
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoon melted butter

Spiced Pear Compote

  • 2 large pears, peeled and diced
  • ¼ cup water
  • 2 tablespoon brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions 

  1. In a mixing bowl, whisk together barley flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, egg, and melted butter. Pour wet ingredients into dry ingredients and mix until just combined.
  3. Heat a skillet over medium heat and lightly grease it. Pour ¼ cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  4. For the compote, combine pears, water, brown sugar, cinnamon, and nutmeg in a saucepan. Cook over medium heat until pears are tender and the mixture thickens.
  5. Serve pancakes topped with warm spiced pear compote.
