Ingredients

  • 1 cup black valentine beans cooked
  • 2 cups roasted tomatoes
  • 1 cup quinoa cooked
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups vegetable broth

Instructions 

  1. Preheat your oven to 400°F (200°C). Place the tomatoes on a baking sheet and roast for 20 minutes.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, chili powder, and cumin to the pot. Cook for another minute.
  4. Add the roasted tomatoes, black valentine beans, cooked quinoa, vegetable broth, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
  6. Serve hot and enjoy!
