Blackeyed Pea Gumbo

Main Ingredients
- 2 cups Blackeyed Peas cooked
- 1 cup Onion chopped
- 1 cup Bell Pepper chopped
- 1 cup Celery chopped
- 3 cloves Garlic minced
- 2 tablespoon Olive Oil
- 4 cups Chicken Broth
- 1 teaspoon Thyme dried
- 1 teaspoon Paprika
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
- ¼ teaspoon Cayenne Pepper
Heat olive oil in a large pot over medium heat.
Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
Add chicken broth, blackeyed peas, thyme, paprika, salt, black pepper, and cayenne pepper. Stir well.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Serve hot and enjoy!
