Ingredients

  • 4 medium beets trimmed and scrubbed
  • 2 large blood oranges peeled and sliced
  • 1 cup arugula
  • ¼ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender. Let cool, then peel and slice.
  3. In a large mixing bowl, combine roasted beets, blood oranges, and arugula.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle over salad and toss gently to combine.
  5. Top with crumbled feta cheese and serve immediately.
