Blood Orange And Roasted Beet Salad

Main Ingredients
- 4 medium beets trimmed and scrubbed
- 2 large blood oranges peeled and sliced
- 1 cup arugula
- ¼ cup feta cheese crumbled
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- to taste salt and pepper
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast for 45 minutes or until tender. Let cool, then peel and slice.
In a large mixing bowl, combine roasted beets, blood oranges, and arugula.
In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper. Drizzle over salad and toss gently to combine.
Top with crumbled feta cheese and serve immediately.
