Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 Large eggs
  • ¼ cup Milk
  • 1 teaspoon Vanilla extract
  • 3 Ripe bananas, mashed
  • 1 cup Fresh blueberries
  • ½ cup Chopped nuts (walnuts or pecans)

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Mix in the mashed bananas, milk, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the blueberries and nuts.
  6. Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
