Main Ingredients
- 2 large boniato peeled and chopped
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
2. Add the chopped boniato to the pot and stir to combine with the onion and garlic.
3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer until the boniato is tender, about 20 minutes.
4. Use a blender to puree the soup until smooth. Return the soup to the pot.
5. Stir in the coconut milk, salt, and black pepper. Heat through and adjust seasoning as needed.
6. Serve hot and enjoy!
