Brazilian Black Bean Soup Recipe

Main Ingredients
- 1 lb dried black beans rinsed and soaked overnight
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon lime juice freshly squeezed
- 0.25 cup cilantro chopped, for garnish
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
2. Add the red and green bell peppers, and cook for another 5 minutes.
3. Add the soaked black beans, vegetable broth, cumin, oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
4. Use a blender to puree the soup until smooth. Return to the pot and stir in the lime juice.
5. Serve hot, garnished with chopped cilantro.
