Ingredients

  • 1 lb dried black beans rinsed and soaked overnight
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoon lime juice freshly squeezed
  • 0.25 cup cilantro chopped, for garnish

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.
  2. 2. Add the red and green bell peppers, and cook for another 5 minutes.
  3. 3. Add the soaked black beans, vegetable broth, cumin, oregano, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
  4. 4. Use a blender to puree the soup until smooth. Return to the pot and stir in the lime juice.
  5. 5. Serve hot, garnished with chopped cilantro.
