Butternut Squash And Swiss Chard Stew

Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 1 bunch Swiss chard chopped
- 1 medium onion diced
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- to taste salt and pepper
1. Heat a large pot over medium heat. Add a splash of oil and sauté the onion until translucent.
2. Add the garlic, cumin, and coriander. Cook for another minute.
3. Add the butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
4. Add the Swiss chard and cook for another 10-15 minutes, until the squash is tender.
5. Season with salt and pepper to taste. Serve hot.
