Ingredients 

Main Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 bunch Swiss chard chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste salt and pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil and sauté the onion until translucent.
  2. 2. Add the garlic, cumin, and coriander. Cook for another minute.
  3. 3. Add the butternut squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. 4. Add the Swiss chard and cook for another 10-15 minutes, until the squash is tender.
  5. 5. Season with salt and pepper to taste. Serve hot.
