  • 2 cups cantaloupe, diced
  • 1 cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • ¼ cup cilantro, chopped
  • 1 lime, juiced
  • ½ teaspoon salt

Instructions 

  1. In a large mixing bowl, combine the diced cantaloupe, red bell pepper, red onion, jalapeño, and cilantro.
  2. Add the lime juice and salt. Toss everything together until well mixed.
  3. Let the salsa sit for about 10 minutes to allow the flavors to meld together. Serve immediately or refrigerate until ready to serve.
