Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 4 cups Carrots peeled and chopped
  • 2 cups Vegetable Broth
  • 1 cup Orange Juice freshly squeezed
  • 1 teaspoon Ground Ginger
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Add the chopped carrots and cook for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender, about 20 minutes.
  5. Remove from heat and let cool slightly. Use a blender to puree the soup until smooth.
  6. Return the soup to the pot, stir in the orange juice, and add ground ginger. Season with salt and pepper to taste. Heat through before serving.
