Ingredients

  • 2 chayotes peeled and julienned
  • 1 poblano pepper julienned
  • ¼ cup cilantro chopped
  • ¼ cup red onion thinly sliced
  • 2 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large mixing bowl, combine the julienned chayotes, poblano pepper, cilantro, and red onion.
  2. 2. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  3. 3. Pour the dressing over the vegetables and toss to coat evenly.
