- 4 pieces Chicken breasts boneless, skinless
- 2 tablespoons Olive oil
- 2 pieces Shallots finely chopped
- 2 pieces Meyer lemons juiced and zested
- 1 cup Chicken broth low sodium
- 1 tablespoon Butter
- to taste Salt and pepper
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
3. In the same skillet, add shallots and cook until softened, about 2-3 minutes.
4. Add Meyer lemon juice, zest, and chicken broth to the skillet. Bring to a simmer and cook until the sauce is reduced by half, about 5 minutes.
5. Return chicken breasts to the skillet and cook for an additional 5 minutes, or until the chicken is cooked through.
6. Stir in butter until melted and sauce is smooth. Serve chicken breasts with sauce spooned over the top.
