Ingredients

Main Ingredients

  • 4 pieces Chicken breasts boneless, skinless
  • 2 tablespoons Olive oil
  • 2 pieces Shallots finely chopped
  • 2 pieces Meyer lemons juiced and zested
  • 1 cup Chicken broth low sodium
  • 1 tablespoon Butter
  • to taste Salt and pepper

Instructions

  1. 1. Season chicken breasts with salt and pepper.
  2. 2. Heat olive oil in a skillet over medium-high heat. Add chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. 3. In the same skillet, add shallots and cook until softened, about 2-3 minutes.
  4. 4. Add Meyer lemon juice, zest, and chicken broth to the skillet. Bring to a simmer and cook until the sauce is reduced by half, about 5 minutes.

  6. 6. Stir in butter until melted and sauce is smooth. Serve chicken breasts with sauce spooned over the top.
