Coahuila Style Stewed Poblano Pepper Tacos
These tacos are packed with flavor from stewed poblano peppers, a staple in Coahuila cuisine.

- 4 Poblano peppers
- 1 tablespoon Olive oil
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 1 cup Tomato sauce
- 8 Tortillas
- to taste Salt and pepper
Roast the poblano peppers until charred. Peel, seed, and slice them.
Heat olive oil in a skillet over medium heat. Add onions and cook until translucent.
Add garlic and cook for another minute.
Add sliced poblano peppers and tomato sauce. Simmer for 10 minutes.
Season with salt and pepper to taste.
Warm the tortillas and fill them with the stewed poblano mixture.
