Main Ingredients
- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Fresh cranberries coarsely chopped
- 2 Satsumas peeled and segmented
- 1 Egg beaten
- ½ cup Orange juice freshly squeezed
- ¼ cup Vegetable oil
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
Add the cranberries and satsumas to the dry ingredients, stirring to combine.
In a separate bowl, whisk together the egg, orange juice, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
