Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups chopped vegetables (carrots, bell peppers, etc.)
  • to taste Salt and pepper
  • 1 tablespoon lime juice
  • ¼ cup fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic, grated ginger, and ground turmeric. Cook for another 2 minutes.
  3. Pour in the vegetable broth and bring to a boil. Add chopped vegetables and simmer for 10 minutes.
  4. Stir in the coconut milk and cook for another 5 minutes.
  5. Blend the soup until smooth using a blender. Return to the pot and season with salt, pepper, and lime juice.
  6. Garnish with fresh cilantro before serving.
