  • 1 large Turban Squash peeled, seeded, and cubed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream
  • to taste Salt and Pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the cubed turban squash and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Heat through before serving.
