Curried Blistered Green Beans with Orange Rice

Main Ingredients
- 1 lb Green beans trimmed
- 2 tablespoon Olive oil
- 1 teaspoon Curry powder
- 1 cup Rice
- 1 cup Orange juice
- 1 cup Water
- 1 teaspoon Salt
Heat olive oil in a skillet over medium-high heat. Add green beans and cook until blistered and tender, about 8-10 minutes.
Sprinkle curry powder over the green beans, stirring to coat. Cook for another 2 minutes.
In a saucepan, combine rice, orange juice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer until rice is cooked, about 15 minutes.
Fluff the rice with a fork and serve alongside the curried green beans.
