Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Carrot, chopped
  • 1 Celery stalk, chopped
  • 1 bunch Dino Kale, chopped
  • 4 cups Vegetable Broth
  • 2 cans White Beans, drained and rinsed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
  3. Add the chopped dino kale and cook for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the white beans, salt, and black pepper. Reduce heat and let simmer for 20 minutes.
  6. Serve hot and enjoy!
