Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion, garlic, carrot, and celery. Sauté until softened, about 5-7 minutes.
Add the chopped dino kale and cook for another 2-3 minutes.
Pour in the vegetable broth and bring to a boil.
Add the white beans, salt, and black pepper. Reduce heat and let simmer for 20 minutes.
Serve hot and enjoy!
