  • 2 cups Corn kernels fresh or frozen
  • 1 cup Cherry tomatoes diced
  • 1 Red onion diced
  • 1 Jalapeño minced
  • ¼ cup Cilantro chopped
  • 1 Lime juiced
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat a skillet over medium-high heat. Add the corn kernels and dry roast until they are slightly charred, about 10 minutes. Stir occasionally.
  2. In a mixing bowl, combine the roasted corn, diced cherry tomatoes, red onion, minced jalapeño, and chopped cilantro.
  3. Squeeze the juice of one lime over the mixture. Add salt and black pepper to taste. Mix well.
  4. Serve immediately or refrigerate for later. Enjoy!
