- 6 eggs
- 1 cup heirloom tomatoes, chopped
- ¼ cup fresh basil, chopped
- ½ cup cream cheese, cubed
- 1 tablespoon olive oil
- to taste salt and pepper
Preheat your oven to 375°F (190°C).
In a bowl, whisk the eggs with salt and pepper.
Heat olive oil in a skillet over medium heat. Add the chopped tomatoes and cook for 2-3 minutes.
Add the basil and cook for another minute.
Pour the eggs into the skillet and cook for 2 minutes, stirring gently.
Add the cream cheese cubes evenly over the egg mixture.
Transfer the skillet to the preheated oven and bake for 15 minutes, or until the eggs are set.
Remove from the oven and let it cool slightly before serving.
