- 1 cup Green olives chopped
- 1 cup Fresh parsley chopped
- ½ cup Walnuts chopped
- ¼ cup Olive oil
- 2 tablespoon Lemon juice freshly squeezed
- 1 pinch Salt to taste
- 1 pinch Black pepper to taste
- 8 leaves Endive separated
In a mixing bowl, combine the chopped green olives, parsley, and walnuts.
Add the olive oil, lemon juice, salt, and black pepper to the bowl. Mix well.
Spoon the mixture into the separated endive leaves.
