Ingredients

  • 1 cup fava beans, shelled
  • ¼ cup olive oil
  • 1 clove garlic, minced
  • ¼ cup grated Parmesan cheese
  • to taste Salt and pepper
  • 1 baguette, sliced
  • ¼ cup fresh mint leaves, chopped

Instructions 

  1. Cook fava beans in boiling water for 3-4 minutes. Drain and cool.
  2. In a bowl, mash fava beans with olive oil, garlic, Parmesan, salt, and pepper.
  3. Toast baguette slices until golden brown.
  4. Spread fava bean mixture on toasted baguette slices.
  5. Garnish with chopped mint leaves.
