  • 1 pound fingerling potatoes cut into ½-inch pieces
  • 2 tablespoons olive oil
  • 1 cup leeks sliced
  • 2 cups Swiss chard chopped
  • 4 eggs
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the potatoes and cook until they start to brown, about 10 minutes.
  3. Add the leeks and cook until they soften, about 5 minutes.
  4. Stir in the Swiss chard and cook until wilted, about 3 minutes.
  5. Make four wells in the hash and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set, about 5 minutes.
  7. Season with salt and pepper to taste and serve immediately.
