- 4 cups spelt flour
- 1 packet active dry yeast
- 1 cup warm water
- ¼ cup honey
- ¼ cup olive oil
- 1 teaspoon salt
1. In a large mixing bowl, combine warm water and honey. Sprinkle the yeast over the top and let it sit for about 5 minutes, until foamy.
2. Add the spelt flour, olive oil, and salt to the yeast mixture. Stir until a dough forms.
3. Turn the dough out onto a floured surface and knead for about 10 minutes, until smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Preheat the oven to 375°F (190°C). Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place on a baking sheet.
6. Cover the rolls with a damp cloth and let them rise for another 30 minutes.
7. Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown.
