French Country Style Beet Salad
A refreshing and earthy beet salad inspired by the French countryside.

Main Ingredients
- 4 medium beets trimmed and scrubbed
- 1 cup goat cheese crumbled
- ¼ cup walnuts toasted and chopped
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- to taste salt and pepper
1. Place beets in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer until tender, about 40 minutes. Drain and cool.
2. Once cooled, peel the beets and cut into bite-sized pieces.
3. In a mixing bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
4. Add the beets to the bowl and toss to coat with the dressing.
5. Top with crumbled goat cheese and toasted walnuts before serving.
