  • 4 Eggs
  • 2 tablespoon Chopped fresh herbs (such as parsley, chives, and dill)
  • ¼ cup Crumbled goat cheese
  • 1 tablespoon Butter
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, whisk the eggs until well combined. Season with salt and pepper.
  2. 2. Heat the butter in a non-stick skillet over medium heat.
  3. 3. Pour the eggs into the skillet and cook until they begin to set, about 2 minutes.
  4. 4. Sprinkle the fresh herbs and goat cheese over one half of the omelet.
  5. 5. Fold the other half of the omelet over the filling and cook for another 1-2 minutes, until the cheese is melted and the eggs are fully cooked.
  6. 6. Slide the omelet onto a plate and serve immediately.
