- 4 large Tomatoes chopped
- 2 Avocados peeled and pitted
- 1 cup Vegetable Broth
- 1 clove Garlic minced
- 1 tablespoon Lime Juice freshly squeezed
- to taste Salt
- to taste Black Pepper
1. In a blender, combine the chopped tomatoes, avocados, vegetable broth, minced garlic, and lime juice.
2. Blend until smooth and creamy.
3. Season with salt and black pepper to taste.
4. Chill in the refrigerator for at least 30 minutes before serving.
5. Serve cold, garnished with fresh herbs if desired.
