  • 4 Fuyu persimmons peeled and chopped
  • 1 cup Sugar
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Pectin

Instructions 

  1. 1. Combine persimmons and sugar in a saucepan over medium heat.
  2. 2. Cook until the persimmons are soft, about 20 minutes.
  3. 3. Blend the mixture until smooth.
  4. 4. Return to the saucepan, add lemon juice and pectin, and cook for another 10 minutes.
  5. 5. Pour into a jar and let it cool before refrigerating.
