Main Ingredients
- 1 lb sunchokes peeled and chopped
- 4 cloves garlic minced
- 1 medium onion chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- to taste salt and pepper
1. In a large pot, sauté the onion and garlic until translucent.
2. Add the sunchokes and vegetable broth. Bring to a boil, then simmer for 20 minutes.
3. Blend the soup until smooth. Return to the pot.
4. Stir in the heavy cream and season with salt and pepper. Heat through and serve.
