Giardiniera Italian Pickled Vegetables Recipe

- 2 cups Cauliflower florets
- 1 cup Carrot slices
- 1 cup Celery slices
- 1 cup Red bell pepper slices
- 1 cup Green olives
Brine
- 2 cups White vinegar
- 2 cups Water
- 2 tablespoon Salt
- 1 tablespoon Sugar
- 2 cloves Garlic sliced
- 1 teaspoon Dried oregano
- 1 teaspoon Black peppercorns
1. Prepare the vegetables: Cut cauliflower into small florets, slice carrots, celery, and bell peppers.
2. In a large pot, combine vinegar, water, salt, sugar, garlic, oregano, and peppercorns. Bring to a boil.
3. Add the vegetables to the pot and simmer for 5 minutes.
4. Remove from heat and let cool slightly.
5. Pack the vegetables into jars, pour the brine over them, and seal the jars.
6. Refrigerate for at least 24 hours before serving.
