Grapefruit Lemon Bars Recipe

Crust
- 1 cup unsalted butter melted
- 2 cups all-purpose flour
- ½ cup granulated sugar
Filling
- 1 ½ cups granulated sugar
- ¼ cup all-purpose flour
- 4 large eggs
- ½ cup fresh lemon juice
- ½ cup fresh grapefruit juice
- 1 tablespoon grapefruit zest
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
In a mixing bowl, combine melted butter, 2 cups of flour, and ½ cup of sugar. Press the mixture into the prepared baking dish.
Bake the crust for 15-20 minutes, or until lightly golden. Remove from oven and set aside.
In another bowl, whisk together 1 ½ cups of sugar and ¼ cup of flour. Add the eggs, lemon juice, grapefruit juice, and grapefruit zest. Mix well.
Pour the filling over the baked crust. Bake for an additional 20-25 minutes, or until the filling is set.
Let the bars cool completely before cutting into squares. Dust with powdered sugar if desired.
