Ingredients

  • 200 g green beans trimmed and cut into 2-inch pieces
  • 300 g potatoes peeled and diced
  • 1 large leek sliced
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 10 minutes. Drain and set aside.
  2. 2. In the same pot, blanch the green beans for 3-4 minutes until tender-crisp. Drain and set aside.
  3. 3. In a large bowl, combine the potatoes, green beans, and sliced leeks.
  4. 4. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine.
  5. 5. Serve warm or at room temperature.
