Ingredients 

Main Ingredients

  • 4 Leeks trimmed and halved lengthwise
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Herbed Vinaigrette

  • 3 tablespoon Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove Garlic minced
  • 1 tablespoon Fresh parsley chopped
  • 1 tablespoon Fresh chives chopped
  • ½ cup Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Brush the leeks with olive oil and season with salt and pepper.
  3. 3. Grill the leeks for about 5-7 minutes on each side, until they are tender and have nice grill marks.
  4. 4. In a mixing bowl, whisk together the red wine vinegar, Dijon mustard, minced garlic, chopped parsley, and chopped chives.
  5. 5. Slowly drizzle in the olive oil while whisking continuously until the vinaigrette is well combined. Season with salt and pepper to taste.
  6. 6. Drizzle the herbed vinaigrette over the grilled leeks and serve warm.
