Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Nopales, diced cooked
  • 1 cup Cherry tomatoes, halved
  • 1 cup Red onion, thinly sliced
  • 1 tablespoon Olive oil
  • 1 tablespoon Lime juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Toss the shrimp with olive oil, salt, and pepper.
  3. 3. Grill the shrimp for 2-3 minutes on each side until pink and opaque.
  4. 4. In a mixing bowl, combine the grilled shrimp, nopales, cherry tomatoes, and red onion.
  5. 5. Drizzle with lime juice and toss to combine.
  6. 6. Serve immediately.
