  • 1 lb Pork Tenderloin
  • 2 Hatch Chiles roasted and chopped
  • 1 cup Cheese shredded
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the pork tenderloin and flatten it out.
  3. Spread the roasted hatch chiles and shredded cheese evenly over the pork.
  4. Roll the pork up and tie it with kitchen twine.
  5. Rub the outside with olive oil, salt, and pepper.
  6. Place on a baking sheet and roast for 40 minutes or until the internal temperature reaches 145°F (63°C).
  7. Let it rest for 10 minutes before slicing.
