  • 8 pieces Chicken thighs bone-in, skin-on
  • 1 cup Hatch salsa
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper freshly ground

Instructions 

  1. In a mixing bowl, combine hatch salsa, olive oil, salt, and black pepper.
  2. Add chicken thighs to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken thighs for about 10 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. Remove from the grill and let rest for a few minutes before serving.
