Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 zucchini, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 cup kale, chopped
- to taste salt and pepper
Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.
Add carrots, celery, and zucchini. Cook for about 5 minutes, stirring occasionally.
Pour in vegetable broth, and add thyme and basil. Bring to a boil, then reduce heat and let simmer for 20 minutes.
Add chopped kale and cook for another 5 minutes. Season with salt and pepper to taste.
