Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 zucchini, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup kale, chopped
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until fragrant.
  2. Add carrots, celery, and zucchini. Cook for about 5 minutes, stirring occasionally.
  3. Pour in vegetable broth, and add thyme and basil. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  4. Add chopped kale and cook for another 5 minutes. Season with salt and pepper to taste.
  5. Serve hot and enjoy your healthy cleansing soup!
