Ingredients

  • 4 zucchini medium-sized
  • 1 cup quinoa cooked
  • 1 cup cherry tomatoes halved
  • ½ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 teaspoon oregano dried
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the flesh, leaving a small border to create zucchini boats.
  3. In a bowl, mix the cooked quinoa, cherry tomatoes, feta cheese, olive oil, oregano, salt, and pepper.
  4. Stuff the zucchini boats with the quinoa mixture and place them in a baking dish.
  5. Bake for 25-30 minutes until the zucchinis are tender and the tops are golden brown.
  6. Serve warm and enjoy!
