Ingredients 

Main Ingredients

  • 2 cups hearts of palm, chopped
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • to taste salt and pepper

Instructions 

  1. 1. In a pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until translucent.
  2. 2. Add the chopped hearts of palm and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. 3. Remove from heat and let it cool slightly. Transfer to a blender and blend until smooth.
  4. 4. Return the blended soup to the pot. Stir in the heavy cream and season with salt and pepper to taste. Heat through, but do not boil.
  5. 5. Serve hot, garnished with fresh herbs if desired.
