  • 2 cups Diced potatoes
  • 1 cup Chopped kale
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced potatoes and cook until they start to soften, about 10 minutes.
  3. Add diced onion and cook until translucent, about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Stir in chopped kale and cook until wilted, about 3 minutes.
  6. Season with salt and black pepper. Serve hot.
