  • 6 large eggs
  • 1 cup crimini mushrooms, sliced
  • 1 cup leeks, sliced
  • ½ cup milk
  • ¼ cup grated Parmesan cheese
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add leeks and mushrooms, cook until softened.
  3. In a mixing bowl, whisk together eggs, milk, Parmesan cheese, salt, and pepper.
  4. Pour the egg mixture over the cooked leeks and mushrooms in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set.
  6. Let cool slightly before slicing and serving.
