Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup small pasta
  • 1 can white beans, drained and rinsed
  • 4 cups kale, chopped
  • 1 lemon, juiced
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the pasta and cook until al dente, about 10 minutes.
  6. Stir in the white beans and chopped kale, cooking until the kale is wilted, about 5 minutes.
  7. Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
