Lemon Soup With Pasta White Bean And Kale

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 1 cup small pasta
- 1 can white beans, drained and rinsed
- 4 cups kale, chopped
- 1 lemon, juiced
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in the vegetable broth and bring to a boil.
Add the pasta and cook until al dente, about 10 minutes.
Stir in the white beans and chopped kale, cooking until the kale is wilted, about 5 minutes.
Remove from heat and stir in the lemon juice. Season with salt and pepper to taste.
Serve hot and enjoy!
