Main Ingredients
- 2 cups dried lima beans soaked overnight
- 1 large onion chopped
- 2 cloves garlic minced
- 2 cups vegetable broth
- 1 cup water
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until translucent.
3. Add soaked lima beans, vegetable broth, and water. Bring to a boil.
4. Reduce heat and simmer for 45 minutes or until beans are tender.
5. Season with salt, pepper, cumin, and paprika. Stir well.
