  • 2 large Portobello mushrooms stems removed
  • 4 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 1 clove garlic minced
  • ¼ cup milk
  • to taste salt and pepper

Instructions 

  1. 1. In a mixing bowl, combine olive oil, balsamic vinegar, and minced garlic. Add Portobello mushrooms and marinate for 10 minutes.
  2. 2. Preheat the grill to medium-high heat. Grill the mushrooms for about 5 minutes on each side or until tender. Remove from grill and slice.
  3. 3. In another bowl, whisk together eggs, milk, salt, and pepper.
  4. 4. Heat a frying pan over medium heat and add a bit of olive oil. Pour in the egg mixture and cook until it starts to set.
  5. 5. Add the grilled mushrooms to one side of the omelet. Fold the other side over the mushrooms and cook for another minute or until fully set.
  6. 6. Serve hot and enjoy!
