Mediterranean Lentil and Spinach Soup

Main Ingredients
- 1 cup green lentils rinsed
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 carrot chopped
- 1 celery stalk chopped
- 4 cups vegetable broth
- 2 cups fresh spinach chopped
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, cook until softened.
Stir in cumin and coriander, cook for another minute.
Add chopped carrot and celery, cook for 5 minutes.
Add lentils and vegetable broth, bring to a boil.
Reduce heat, cover, and simmer for 20 minutes.
Stir in chopped spinach, cook for another 5 minutes.
Season with salt and pepper to taste. Serve hot.
