Main Ingredients
- 4 medium Okinawa sweet potatoes peeled and cubed
- 1 cup coconut milk full-fat
- 2 tablespoon butter unsalted
- 1 teaspoon salt
1. Peel and cube the Okinawa sweet potatoes.
2. Boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes.
3. Drain the potatoes and return them to the pot.
4. Add the coconut milk, butter, and salt. Mash until smooth.
5. Serve warm.
